- Wash the cucumbers thoroughly. If you don’t remove the skins, you increase their nutrition and fiber content! To clean the shells, you can soak them in vinegar water for 10 minutes and then rinse them in running water.
- Follow the same process for the potatoes, using running water to wash the soil layer. Then soak in vinegar water and rinse again.
1. Slice the cucumber, remove excess water
Cucumber is already a juicy vegetable, and when creating your chips, you’re probably going to want a crispy texture rather than a moist texture. So after washing the cucumbers well, arrange them on a grid. Allow excess water to dry.
Should the skins be peeled or not?
Let me answer in two ways and you choose the one that suits you.
I do not separate the cucumber skins while making this recipe for myself. This way I increase the fiber content of the recipe and therefore the health benefits too.
Also, if you’re on a ketogenic diet, I wouldn’t recommend splitting it up, because fiber inhibits or slows carb absorption.
But if you’re making this recipe for your guests, and your cucumber skins aren’t thin enough then you might want to consider removing the skins… This is because the skin can cause a bitter taste.

2. Slice the potato and steam it, for 15 minutes.
Wash the potatoes, peel them according to your taste or finely chop them with their skins. If you are going to leave skins on in the recipe, you can remove pesticides and increase cleanliness by soaking them in vinegar water.
To soften your potatoes, take a pot and add cold water to it, then boil it for 15-20 minutes. If you chop the potatoes finely, the boiling time will be shorter.
After they’ve been boiled, drain the water from the potatoes and let them cool for a while.
Why is this important?
Because we don’t want our vegetables to be too watery when we start the air fryer drying process.
Bonus info: By cooling potatoes, you can reduce the carbs you get from them and even provide a beneficial prebiotic effect on your gut.
You may be asking yourself how this is possible. The answer is that the starch in the potato turns into resistant starch after it cools.
Especially if you are following a ketogenic diet and a low-carb diet, I recommend that you do not skip this step, as it can make a big difference to the final result.
3. Mix cucumber slices and boiled potato in the blender
Ready to make our chips mixture?
Take the potatoes and cucumbers you have prepared in a blender. Add salt and start mixing.
At this stage, you can add different spices according to your taste. Feel free to add cajun spice, paprika, and black pepper.
4. Place parchment paper in the air fryer, and add the mixture in batches with the help of a spoon
Lay a parchment paper of suitable size inside the air fryer.
With the help of two spoons, add the mixture to the paper in equal sizes. Each chip can be the size of a spoon, slide this mixture onto the parchment paper with the back of the other spoon.
5. Make cucumber and potato mixture spread evenly
Spread the mixture with a spoon to make it thinner.
Bear in mind if the mixture is too thick, it will have a soft consistency after cooking and won’t become crispy.
When thinning out like this, it should be a pretty even thickness between the middle and the edges, so that all the chips can be cooked evenly.
6. Start baking at 250°F for 30 minutes (add season if you like):
If you want to add extra flavor and crispness to the chips you spread, you can spray olive oil on them.
The fact that the spices are in the mixture will ensure that they do not burn. but if you want to add additional salt or pepper, now is the time to sprinkle them on!
Push your chips into the air fryer to cook, and bake at 250°F for 30 minutes.

It’s actually the skins on cucumbers that are important because this is where a bitter taste can develop. If you are not going to peel the cucumbers, try making this recipe with thin-skinned, fresh cucumbers.
As for potatoes, Yukon Gold potatoes and Russet Potato (Idaho potatoes) are the most preferred types for air fryer chips.
What you need to pay attention to here is to take time to dry potatoes with high starch content. Types such as sweet potatoes, and red potatoes will not work so well for your chips.
Cucumber chips air fryer keto
Keto diets are diets that contain less than 50 grams of carbohydrates. Those who follow these diets at least once may notice how stuck they sometimes get, especially when it comes to snacks and variety.
Although vegetables such as cucumbers have some carbohydrate content, they are compatible with ketogenic diets thanks to their high fiber content.
Vegetables such as potatoes may be one of the vegetables we crave in keto diets. There are two ways to adapt this recipe for the ketogenic diet:
1. Portion control:
If you are on a ketogenic diet, you should control the amount of carbohydrates you eat. 1 serving of the recipe contains 19 g of carbohydrates and 7 g of fiber. Therefore, when applying the recipe, it is important to calculate that you have used 12 g of your carbohydrate allowance in this recipe.
2. Resistant starch:
The reason for being flexible in this calculation is the potato cooling process that we mentioned earlier. If you’re not on a ketogenic diet for a condition like epilepsy, you can probably say that your body will use less than 12 grams of carbohydrates.

How to store the cucumber chips air fryer Leftovers
Be sure to completely dehydrate your chips to delay spoilage. Thinning during the cooking stage is critical here.
After the chips are dried, they must be cooled. The cooled chips should then be placed in an airtight container.
The environment in which you will keep the airtight container is also important, and a dark, cool environment is preferred.
An ambient temperature below 60°F will also extend the shelf life of the chips.
How Many Days Do Cucumber Chips Last?
One of the most important factors affecting the deterioration of food is the moisture content of the food. That’s why dried foods can last much longer!
The amount of water in your chips cooked using an air fryer is quite low. Therefore, after the drying process is completed, you can store them in air-tight containers.
Your chips can last for 3 months if stored in a dark and cold area. However, they should be checked occasionally for deterioration.
Before consumption, examine the cucumber chips carefully for any indications of spoilage, such as a rancid odor or a slimy consistency. This will allow you to determine whether or not they are fit for human consumption. Cucumber chips showing signs of deterioration are not suitable for consumption.
